Fleur de Sel is the highest quality salt that comes from the harvesting process – some even call it the “cavier of salt”.  As the water evaporates off the salt ponds, it leaves behind a white crust of salt on top of the traditional sea salt.   White in color, it has a very unique texture…. Not quite flaky, but not overly crystallized either.  Due to the delicate methods of harvesting the Fleur de Sel, it is done by hand, using traditional raking tools.  The name of the Saunier (or salt raker) is placed on the label.
