I was first introduced to the cuillère magique in the Provence kitchen of Julia Child. Her protégé was teaching us how to make a simple French salad dressing. Of the many kitchen utensils I own, this is one of my favorites and I use it on a nearly daily basis. This “magic spoon” quickly and easily blends or emulsifies small amounts of liquid. Because of its small size, it works better with smaller quantities. It works much better on these smaller quantities than a regular whisk. I use mine for that same simple salad dressing when my husband and I are cooking for just the two of us – recipe to come. It also does a great job of scrambling eggs or making a gravy, sauce or roux.
